Ingredients

3 pounds strawberries, washed and hulled
1 cup sugar
1 cup water

Directions

  1. In a large pot, combine sugar and water. Mix over low heat until the sugar has dissolved, then turn up the heat and bring to a boil.
  2. Drop in half of the strawberries. Return to a boil and cook for one minute.
  3. Set a colander inside of a large bowl (to help catch strawberry juice). Using a perforated spoon, transfer the strawberries to the colander.
  4. Repeat the cooking process with the other half of the strawberries.
  5. Once the strawberries have been strained, add the strawberry juice to the pot. Boil the syrup for about 5 minutes, or until it has been reduced to its original volume.
  6. Pour the drained strawberries into the syrup. Simmer for 5 minutes, stirring gently. Be careful not to crush the strawberries.
  7. When the strawberries are coated in the syrup, remove the pan from the heat.
