Ingredients
1 pizza crust (or whole wheat focaccia)
Olive oil
Salt and pepper
1 medium delicata squash (or dumpling squash)
4 yellow onions, sliced thin
1 small package of gorgonzola cheese
Directions
- Place sliced onions in a large skillet over medium-low heat. Drizzle with olive oil and salt and let simmer for 30 minutes. Onions should be soft and transparent.
- Hollow out a delicata squash, remove seeds, and slice into thin slices (1/4 inch) so that they look like flowers.
- Arrange on a baking sheet and drizzle with olive oil, salt, and pepper.
- Roast in the oven at 350 degrees Fahrenheit for 10-15 minutes, or until the squash begins to caramelize and become brown.
- Meanwhile, spread the pizza dough into a half-sheet pan or a round pizza pan. Drizzle with olive oil and salt.
- Scatter with caramelized onions and arrange delicata squash. Place a dollop of Gorgonzola cheese into the center of each squash “flower.”
- Bake at 425 degrees Fahrenheit for 10-15 minutes or until the underside of the pizza crust is a light brown color.
- Serve warm.
To add variety to the pizza, roast the squash with sage, use Parmesan cheese instead of Gorgonzola, and experiment with different squash.
