Ingredients

1 pound blueberries, washed and dried (smaller sized berries are best)
1 (15 ounce) can black beans, drained and rinsed
1 (11 ounce) can sweet corn, drained
1 red onion, diced
1 green bell pepper, diced
1 red bell pepper, diced
1 cup fresh parsley, chopped
2 small cucumbers, diced

Dressing

2 tablespoons plus 1 teaspoon red wine vinegar
2 tablespoons extra-virgin olive oil
1 teaspoon ground cumin
½ teaspoon honey 
1 garlic clove, minced
1½ teaspoons sea salt
½ teaspoon freshly ground black pepper

Directions

  1. Combine cut produce and berries with sweet corn and black beans.
  2. In a separate bowl, whisk together dressing ingredients.
  3. Drizzle dressing over salad and mix until well coated.
