Ingredients

2 Tbsp olive oil
1/2 cup red onion, diced
1 tsp cinnamon
1 tsp allspice
8 cups strawberries, halved (frozen or fresh)
4 cups strawberries, diced (fresh)
4 cups (about 4 stalks) rhubarb, sliced
3/4 cups sugar
1 cup golden raisins
1 Tbsp apple cider vinegar
2 tsp honey (optional)

Directions

  1. In a medium sauce pan, heat olive oil over medium-low heat.
  2. Add onion and sauté until tender.
  3. Add cinnamon, allspice and rhubarb. Stir and cook until fragrant (about 10 minutes).
  4. Add strawberries and let simmer down (about 15 minutes), mashing with a potato masher until the liquid from the strawberries has been reduced and the mixture is thick and almost syrupy.
  5. Once chutney is soft and fruit is broken down, add apple cider vinegar and let reduce another 10 minutes.
  6. Remove from heat. Stir in the golden raisins and 4 cups of diced strawberries.
  7. Taste and add honey if additional sweetness is desired.
