Ingredients

Pumpkin
Olive Oil
Salt & pepper
Other seasonings of your choice

Directions

  1. Heat oven to 375 °F.
  2. Cut top off pumpkin, or for smaller pumpkins, you can cut them open lengthwise.
  3. Remove seeds and pulp from pumpkin and separate seeds from pulp.
  4. If desired, wash seeds to remove all excess strings and pulp. Pat dry with paper towels.
  5. Place seeds on parchment lined baking sheet, drizzle with olive oil, and sprinkle with salt & pepper or whatever spices you like! Toss to coat.
  6. Roast for 10-15 minutes, then let cool on sheet pan.
